For vintgae champagne what is the minimum ageing on the lees? As I understand it from the oxford companion and the compendium it is still minimum of 12 moths and the ageing itself need to be at least 36 months in total. I know that most producers age their vintages more then that but I do want to know the AOC regulation are
Vintage wines must be aged 36 months from tirage, I think maybe you were looking at when wines may be disgorged after tirage? Under élevage it says 15 mos (NV) 36 mos (vintage) post tirage.
Although the minimum aging for vintage Champagne goes up from 15 months (for non-vintage) to 36 months, the minimum time aging on the lees (en tirage) remains at 12 months. The 36 (or 15) month minimum aging includes the minimum 12 months en tirage.
