Topics will include international and indigenous grape varieties, the crucial role of terroir, vinification and vitification practices of Galicia (the farthest west region of Spain and Europe)

The classes are taught by Spain's well known Xoan Canas, who has started a Michelin-starred restaurant and has been awarded the title of Spanish Best Sommelier (Golden Nose 2004) and will come exclusvely to teach this class, offering students a unique qualified perspective.

Galicia is the home to the heroic viticulture which gets its name from the harsh conditions that the Romans experienced while planting the ancient vines on the steep hillsides along the Sil Riverbank, 2000 years ago.

The list of wines is done independently by the somms in Spain and brings today's most representative wines of the terroir.
