Honestly there are times tableside in front of guests, where I just dont have the words. Its easy to get lost in sommspeak if you will. I appreciate the reminder to just get out of the way and let the wine speak for itself.

Love what they are doing with Bobal. Bobal and Mencia are the sleeper grapes that are breaking out in Spain. Get them while they are still some of the best values on the planet. Great article again!

Kelli, I have been spending the past several months looking for wines form Loire. Chinon and Cab Fr. mostly and they have been wonderful. I found your article and it was exactly what I was looking for. I will be there in 2025 and hope to spend enough time to really dig deep. This article is an inspiration. Thank you.

This article is the best thing to happen so far in 2020! Really informative and brought together many forms of thought while fleshing it all out logically.

I had one other question pertaining to the topic and please pardon my mediocre understanding. There are many white wine (chardonnay specifically) producers that are intentionally using ‘brown juice’ instead of green to go into fermentation. The brown juice is, again pardon my potential misunderstanding, when the polyphenol oxidase reacts with polyphenol/tannin chains, oxidizes them, and brings them out of suspension for a less structured (texture loss supplemented by barrel ferment/lees) and more importantly more ‘bulletproof’ to prevent that reaction later in the aging process that would be harmful to the wine.

Has any research been done on this and have there been any findings as to the effect it has on aging potential?
