Icewine can&amp;#39;t be made properly using traditional method, and is made using Charmat. I had put the bit about TM in my notes to remind myself that there are TM sparkling wines which use icewine as dosage (also regulated) and forgot to follow up properly. (Good thing with the new GuildSomm site I can make corrections! Like it never happened! People will wonder what on earth your comment is about!) No, sincerely, please accept my apologies. &lt;p&gt;One minor thing I can&amp;#39;t get my head around though: How would one go about making traditional method Sparkling Ice Wine? I would assume there is too much sugar to get a fermentation going under pressure, and if you could manage that, wouldn&amp;#39;t the resulting wine have quite a high variation in levels of CO2 and RS, depending on how strong the fermentation in every single bottle is? &lt;/p&gt;
