I&amp;#39;m super skeptical when I see more than one or at most two open by the glass and without featuring it in a pairing or giving it some reasonable chance of turning on a regular basis. I think we under estimate the effect of oxidation on many of these wines; even Madiera.&lt;/p&gt;
