What is the name of the rootstock she mentioned - normally used on Limestone soils?
It's Vitis berlandieri. Most of the rootstocks used on limestone are hybrids of berlandieri and another species. An example is 41B (Vitis berlandieri x Vitis vinifera). Vitis vinifera is also tolerant of limestone, but it is susceptible to phylloxera.
