Go to any of the mezcal tasting rooms! Mezcaloteca, Piedra Lumbre, Mezcalogia, et al, are all great starts! A fantastic restaurant and Mezcaleria to check out while you're there: El Destilado. Ask questions at any of those places for recommendations. All super friendly people!

Make sure to go to the Mezcal bar In Situ in Oaxaca city.
If you want to try some good mezcal and tequila, visit for dinner: "VILLA MARIA" Restaurant in Mexico City.
It's super cool! Traditional mexican music, traditional food, and a very good experience!
Also, "El Palenquito" is in Mexico City, I recommend it for tasting mezcal

Try to track down some sotol while you're at it. I found some in CDMX. It had a dead rattlesnake in it.
Go see Lala Noguera at Casa Azteco in Mexico City.
Also, make sure you try some Pulque (a semi fermented agave beverage) from a street vendor and huitlacoche tacos!
