One of the Sekt producers I work with shared this article from the VDP website. It looks like the regulations have not been enshrined in the VDP documents just yet, considering the fact that this article doesn't even appear on the English version of the VDP site at the moment. But keep an eye out for VDP Sekt classifications coming down the pipeline!
Awesome heads up Molly! My thoughts are that classifications(especially regarding lees age requirement/vineyard quality/rs maximum) really help us pair foods correctly and to cater to what the guest preference is. If we are more informed about our product we can only serve our guests better! Way to stay ahead of the game!
