What to charge for teaching wine course?

I am in the process of negotiating a PT teaching gig with a local wine school in Toronto.  The job is mine but I have been asked to come back with my rate.  I'm at a loss for what to charge - its a once a week class of about 2 hours - the course covers general wine material.  I have done dinners in the past where I charge based on number of people and level of intensity of materials to cover.  What would be appropriate?  Any guidance is so appreciated!

  • I used to do $15/hr plus 5% of ticket sales.  It worked out well, because classes went up to 50 attendees for large corporate groups.  Sometimes, it wasn't much if it was a smaller weekend class open to the public.  However, I did bill all hours of prep, which did add up.
