If you were following our Twitter question of the day, the answer was Capovilla, the outstanding producer of eau de vie and grappa from Liguria. This is a pretty good video that they have posted if you want to learn more about their production techniques. It is admittedly a little on the long side, but worth watching.

Geoff, the text says Liguria but I believe Capovilla is from the Veneto.
Tasted through a range of Capovilla grappe today, very well distilled. Picked up the following for the grappa list: Bassano (good value), Moscato & Amarone. For the Amarone they use Dal Forno marc and age in Chateau d'Yquem barrels.
