For vintgae champagne what is the minimum ageing on the lees? As I understand it from the oxford companion and the compendium it is still minimum of 12 moths and the ageing itself need to be at least 36 months in total. I know that most producers age their vintages more then that but I do want to know the AOC regulation are
Although the minimum aging for vintage Champagne goes up from 15 months (for non-vintage) to 36 months, the minimum time aging on the lees (en tirage) remains at 12 months. The 36 (or 15) month minimum aging includes the minimum 12 months en tirage.
