What is this winemaking technique and what purpose does it serve?
Patrick Ducournau, a winemaker in Madiran, pioneered this technique to soften the heavy tannins of Tanat. The technique is to release a small, steady stream of oxygen into the barrels to soften very tannic wines and make them much more approachable. In my mind's eye, I always see an aquarium pump slowly bubbling air into the water.
