Great Video. I noticed that after Mr. Stuckey removed the foil there was no mention of wiping the top of the bottle before the first oz. to oz. and a half was pored for the host to accept. Is this not necessary with sparkling service or just common knowledge that this is to be done? I have seen videos and have read that this is the procedure with still wines after the foil is removed and after the cork is pulled, right? Just curious.
