I don't have an easy answer for this. It can depend on the ripeness of the stems. I've been tricked in to thinking wines without stems had them, and vice versa. It generally gives a slightly herbal/spicy smell. If you ever have a chance to smell a fermenting bin of whole cluster wine, this will help.
